Prosciutto-wrapped Roasted Asparagus
1 pound asparagus (about 19 stalks), trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper
6 to 8 paper-thin slices prosciutto, halved lengthwise
Balsamic vinegar
Preheat the oven to 450 degrees F.
Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is slightly caramelized, about 15 - 25 minutes (depending on the thickness of the spears). Cool slightly.
Wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto, exposing tips. Arrange on a platter and drizzle with balsamic vinegar. Serve at room temperature.

ReplyDeleteLori, this looks amazing. Proscuitto and asparagus is like hand n' glove. However, roasting the asparagus before wrapping it, is over the top. DELICIOUS!!!
ReplyDeleteI have never had proscuitto and asparagus before but have meaning to try it. Roasting it first would take it so the next level. Just thought I would let you know.

My brother made this on Thanksgiving. I have to admit when he made them they didnt look appetizing lol. The kids kept asking "do we have to eat those plant bacon things?". Needless to say I was pleasantly surprised. Yours look delicious makes me want some.

I made these for a dinner party last night and I wish I could tell you how good they were - but they were G O N E before I could even grab one - haha! Everyone loved them. Thanks. (DH is at the store right now getting more asparagus and proscuitto for us for today...)
